My 1973 SL125 is in that category, I keep saying I'll do another full rebuild and get it back on the road, but both kids keep dropping hints that they will want to ride it, so it's safest left gently decomposing until they buy their own bikes...
I say mine, it is actually registered to the wife. 7K from new, though so worth hanging on to.
It's not falling off, it's an upgrade opportunity.

I have to say if I had a bike old enough to be exempt from an mot I'd still get one for it. The reason being to avoid possible issues in the invent of a claim from your insurance company, I can see no mot being a nice loop hole for some of them,

But does the MOT PROVE the vehicle is roadworthy?

At the time of the test yes.

At least with an mot owners who are not bothered how the bike is have to have it road legal to pass the test.
So my way of thinking is, for example it will have had those new brake pads/shoes, steering head bearings, swingarm/linkage bearings, wheel bearings, fork bushes, tyres, lights, chain and sprockets and indicators either replaced or got working at least once a year.
I can see insurance companies thinking this way with no mot, but of course I could be entirely wrong,
